- A delicious meal of 'printed food', meets 3D food printing.
- Sooner or later, you may be able to pick out the food you want and eat it at home. This can be possible because the fourth industrial revolution has been integrated with conventional food engineering and a new technology called "3D Food Printing" has emerged. While an ordinary 3D printer makes products using solid materials such as plastics, the 3D food printer produces foods such as pizza and pasta by printing edible materials. Still, it is unimaginable in Korea to have 'printed food'. In Europe, however, 3D food printing technology is well-known as it has been actively researched since the 2000s and people have already been selling 3D printed food. Currently, most 3D food printers print food by stacking up materials. When you type the recipe into a 3D food printer, it adjusts the position of the nozzle and builds up the material. Therefore, products can be manufactured exactly just like the user designed. "When a recipe-program designates a three-dimensional coordinates according to x, y and z axes, the printer outputs the material in the appropriate location to form a shape of food," said prof. Lee Jin-kyu of Department of Food Engineering at Ewha Womans University. Although the basic principle of making food by layer is same, the principle of operation varies slightly depending on unique nature of ingredients. Prof. Lee Jae-hwan of Department of Food Science and Biotechnology at Sungkyunkwan University said, "The viscous material maintains its form just by stacking one layer from the bottom through extrusion-layers, but the powder-type material requires a process of solidifying each layer with a laser.“ In addition, temperature could be changed during pre-/ post-processing procedures depending on material characteristics, or materials could be hardened by using powder. Through this variety of processing methods, 3D food printers extract materials of different qualities at the same time and also can print products with similar taste and texture to ordinary foods. - Sungkyunkwan University, number one among private universities in Korea
- While Korean engineering universities have been somewhat hesitant in the evaluation rankings of 2019 THE Asia-Pacific universities, the growth of private universities has been marked in the latest evaluation. 29 universities in our country were ranked in the rankings from this evaluation and there are two more compared to last year. Seoul National University, Sungkyunkwan University, and KAIST are in the top 20 rankings and a total of 10 universities ranked higher than the previous year include Seoul National University, Sungkyunkwan University, Korea University, UNIST, Kyung Hee University, Hanyang University, Kyungpook National University, Ajou University, Incheon National University (newly ranked) and Kookmin University (newly ranked). In particular, Sungkyunkwan University ranked 14th overall this year, up six notches from the previous year. Since it first entered the top 20 in the Asia-Pacific region last year, it has shown rapid growth, ranking second among all universities in South Korea and No. 1 among private universities. This year's leap of Sungkyunkwan University seems to be due to good results in the paper citation counts and industrial-school cooperation. Among them, the paper scored 74.8 points, higher than Seoul National University (64.2), which ranks first in Korean universities Sungkyunkwan University established the Sungkyun Science and Technology Institute of Bio Convergence (2016) and the Intelligent Information Convergence Institute (2017), and has started developing leading models in convergence research in order to establish a foundation of capacity for convergence in culture, art and media sectors throughout 2018. - SKKU Professor Dae Hyeok Kweon's team developed a nano-perforator that causes the virus to die by itself - Published online in the January 15 issue of the international journal of 'Nature Communications' - This research was conducted by SKKU Dr. Byeong-jae Kong and SKKU Ph.D. student Seok-oh Moon as a first author and a co-author respectively, and by co-study with SKKU Professor Woo-jae Chung and Yonsei University Professor Baek-lin Seong's team. This research was carried out with the support of Samsung Research Funding & Incubation Center for Future Technology. The results of the study were published online in the January 15 issue of Nature Communications. [Abstract] Membrane-disrupting agents that selectively target virus versus host membranes could potentially inhibit a broad-spectrum of enveloped viruses, but currently such antivirals are lacking. Here, we develop a nanodisc incorporated with a decoy virus receptor that inhibits virus infection. Mechanistically, nanodiscs carrying the viral receptor sialic acid bind to influenza virions and are co-endocytosed into host cells. At low pH in the endosome, the nanodiscs rupture the viral envelope, trapping viral RNAs inside the endolysosome for enzymatic decomposition. In contrast, liposomes containing a decoy receptor show weak antiviral activity due to the lack of membrane disruption. The nanodiscs inhibit influenza virus infection and reduce morbidity and mortality in a mouse model. Our results suggest a new class of antivirals applicable to other enveloped viruses that cause irreversible physical damage specifically to virus envelope by viruses’ own fusion machine. In conclusion, the lipid nanostructure provides another dimension for antiviral activity of decoy molecules. [Fig. 1] The structure of Nano-perforator. - New Year’s Message from the President of SKKU
- Dear Sungkyun Family, The year of Golden Dog has passed, and the new year of 2019 has come. This year is the year of the Golden Pig, which brings abundance to life. I sincerely hope that all SKKU members’ dreams and wishes are realized in accordance with the meaning of the year. Despite the tough domestic and foreign environment, our university has made a great achievement by entering the list of top 100 global universities. SKKU now takes rank with many prestigious universities in the world by achieving 82nd place in THE and 100th place in QS world university rankings. This will leave a significant mark on our university’s long history. Last year, SKKU was selected for the demonstration of university innovation project (PILOT) and has achieved 1st place in the National Customer Satisfaction Index (NCSI) for 12 consecutive years. Also, we saw great results such as recording the highest job employment rate for 5 consecutive years and producing an increasing number of successful candidates for the national exams. We have newly established prospective majors to meet the needs of the era of fusion and convergence. Academic affairs have been reorganized to a flexible and student-centered system, setting the foundation for a new takeoff. In addition, SKKU has exhibited a high level of research power in the global academic world. In 2018, four of our researchers were selected as ‘Highly Cited Researcher’ and we have made excellent academic achievements in both quantity and quality. More than 5000 theses (SCI) were published for 2 years in a row and each piece was cited more than 10 times. Also, SKKU has gained a foothold of GT10+Convergence R&E cluster centered research by establishing the Institute of Quantum Biophysics and Institute of Art & Culture Media Convergence. SKKU was able to maintain inner stability and move on as a global leading university by the united efforts of university, foundation and alumnus. I would like to express my sincere appreciation for all the Sungkyun members for their dedication to our university. We should now take a powerful step toward our goal of being a ‘Global Leading University’. We should bear in mind that if we remain content of our previous achievements, we will fall behind of competition. Our university is now confronting challenges such as: the call for futuristic human resource education, decrease in number of school age population and the appearance of new form in education. SKKU will not remain content of our 600 years of history but move on by overcoming hardships with the collective wisdom of Sungkyun family. This year, I feel a great sense of responsibility and duty as the new president of SKKU. I will do my best to make SKKU a successful model of an innovative university and a truly Global Leading University. I suggest the following policies to achieve this goal: First, strengthen data · convergence education Second, achieve Global TOP 50 researches Third, advance as the leading university of new industries Fourth, manage based on the principle of communication and participation Again, thank you very much for all the dedication towards the development of our university. I wish each and every one of you good health and success in the year of our school’s 621st anniversary. January 1st, 2019 Dong Ryeol SHIN, The President of SKKU
